Marinated Steak and Roasted Veggies

I have to share our absolute favorite marinade for flank or round steak. I found this recipe earlier this year, and we can’t get enough of it. I always try to find new ways to prepare our game, and this was definitely a hit!

  • 3/4 cup low sodium soy sauce
  • 1/4 cup olive oil
  • 1/4 cup packed brown sugar
  • 1 tablespoon cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1/2 teaspoon ground pepper
  • 2 teaspoons garlic chopped
  • 1 1/2 pounds flank steak

In a pinch we let it sit for 3-4 hours, but usually I let it sit for 24 hours. We also always pair it with a roasted veggie. Tonight was roasted zucchini!

For the zucchini:

•Preheat the oven to 400

•Trim the ends of the zucchini

•Slice lengthwise into quarters

•Evenly coat in olive oil

•Ground salt and pepper over the slices

•Sprinkle Italian seasoning

•Bake for 15 minutes

•Broil for 5

Make sure you elevate the zucchini if you can to help it not get soggy!

Tonight we used pronghorn round steaks, but it’s good with any type of game. Try this recipe out, and let me know if you like it!
